Spread your cheese on the warm crostini, spoon on the strawberries, drizzle with glaze, and sprinkle with herbs, salt, and pepper. Done.
Whether you call it strawberry balsamic crostini or strawberry balsamic bruschetta, this dish is all about layering flavors without overthinking it.
Variations and Substitutions
Here’s where things get fun. You can easily swap in different cheeses, fruits, or garnishes depending on what you’re in the mood for.
- Peaches in the summer
- Figs or Peas in the Fall
- Roasted Grapes in the winter
Strawberry Bruschetta with Cream Cheese
Use whipped cream cheese for an ultra-smooth base. Add a little honey to the cream cheese if you like it slightly sweeter. This version is great for spring and early summer gatherings.
Peach Burrata Crostini
When peaches are in season, switch out the strawberries. Slice the peaches thin, grill them lightly, and pair them with burrata. The combination of juicy fruit and creamy cheese on crispy bread is so satisfying. It’s basically grilled peach bruschetta in crostini form.
Peach Crostini Recipe
Don’t have burrata? Use goat cheese or ricotta. Top with chopped peaches, drizzle with honey or balsamic, and finish with a pinch of sea salt.
Peach Bread with Canned Peaches
Want something more like a sweet snack or breakfast bite? Toast a slice of peach bread made with canned peaches, smear on cream cheese, and top with fresh fruit and balsamic glaze. It’s a little like strawberry balsamic crostini’s dessert cousin.
More Ideas
-
Add prosciutto for a salty-savory layer
-
Use mascarpone or ricotta instead of cream cheese
-
Swap basil for mint or microgreens
-
Add toasted walnuts or pistachios for crunch
More Tips
-
Use day-old bread—it holds up better when toasted
-
Don’t overload the toppings or the crostini will get soggy
-
If using balsamic vinegar, reduce it on the stove with a little sugar to make a glaze
