➡️ Parmesan Reggiano - I use freshly grated Parmigiano Reggiano instead of pre-grated because it melts better, tastes saltier and nuttier, and creates that golden, crispy crust - without the anti-caking powders that keep pre-shredded cheese from browning properly. Parmigiano Reggiano is the real deal - it's made in specific regions of Italy under strict regulations, aged longer, and has a deeper, nuttier, more complex flavor.

Substitutions
✅ Substitute Russet potatoes for the Yukon Gold potatoes. Russet will get extra crispy because of its starch content, but the inside will be a little fluffier and less creamy. Peel them first for the best texture. Fingerling potatoes - Fingerling potatoes are great for entertaining because their long, elegant shape looks beautiful on a platter.
✅ Substitute Olive oil for Vegetable or canola oil - Budget-friendly and works well for crisping. Avocado oil - My top swap. High smoke point and neutral flavor, so it crisps beautifully.

- Preheat and Prep
Preheat oven to 400°F. Wash and Cut Potatoes in half.

- Grate Parmesan
And scatter on garlic Parmesan mixture on a parchment-lined baking sheet.

- Add Potatoes
Add potatoes, cut side down, to the parchment-lined baking sheet.

- Bake
Bake for 35-40 minutes until golden brown.

👩🍳 Cheese labeled simply "Parmesan" can be made anywhere, is often aged for less time, and usually has less flavor and a drier texture. Look for the real deal, even though it's more expensive, you use less of it because it has so much more flavor.
👩🍳 Don't be tempted to open the oven door to peek before the 30-minute mark. Every time you open the door, heat escapes and the temperature can drop 25-50°F within seconds - more if it stays open for a while.
👩🍳 If you're short on time, you can microwave the potatoes for 2-3 minutes before roasting. This par-cooks the potatoes and will cut down your baking time.

Crispy Garlic Parmesan Potatoes
Equipment
- Sheet Pan
Ingredients
- 1.5 lb baby yellow potatoes halved
- 3-4 tablespoon olive oil
- Salt or Garlic Salt and Pepper
- Fresh Herbs rosemary, thyme or parsley
- Parmesan Mixture
- ¾ cup grated parmesan
- ½ teaspoon garlic powder
- ¼-1/2 teaspoon kosher salt
- ½ teaspoon black pepper
- Optional pinch of chili flakes
Instructions
- Preheat oven to 400F.
- Mix the olive oil, salt, pepper, and garlic powder in a bowl.
- Drizzle and spread oil on a parchment-lined sheet pan.
- Scatter the Parmesan Mixture over the olive oil. Once sprinkled, do not touch - don't try to spread it.
- Place potatoes cut side down, pressing firmly.
- Drizzle the top of the potatoes with more olive oil or spray with oil, then sprinkle generously with salt.
- Bake potatoes for 35 - 40 minutes or until they are soft and the parmesan crust is deep golden brown on the bottom.
- Then place on the serving platter. Garnish with chopped parsley if desired.

- If adding fresh herbs at after the potatoes are roasted. Chopped rosemary, thyme, or parsley should be tossed in right after the potatoes come out of the oven. High heat can burn them and dull their flavor.
- Make sure to use fresh grated Parmesan with a sand-like texture. I grate my own Parmesan-Reggiano because it has more flavor and it's delicious.. But you can find the sand-like grated parmesan in the deli area. Note that the pre-shredded Parmesan sold in the cheese aisles won't give you the same crispiness.
- Don't peek too often. Every time you open the oven, it adds quite a bit more time to the overall cooking time because the oven has to reheat again.
- If you're short on time, you can also microwave the potatoes for 2-3 minutes before roasting. This helps get the inside cooked faster, and you can cut down your bake time.
