- Make-ahead friendly → Make the dressing ahead of time and keep it in the refrigerator for a couple of weeks
- Everyone loves it → I make a variation of this for about 90% of my dinner parties

The Simple Formula for Mixed Greens Salad
Instead of overthinking it, I follow this every time:
- Mixed Greens: Mixed greens are a blend of tender lettuces like baby spinach, arugula, and spring mix, and have a mix of sweet and slightly peppery flavors in one bag.
- Olive Oil: I prefer Extra Virgin Olive Oil. It's got that rich, peppery flavor, plus it's loaded with heart-healthy fats and antioxidants.
- Vinegar: I usually use balsamic, but you've got plenty of options-check out the full list in the substitutions section.
- Honey: My secret ingredient. It takes it to the next level.
- Topping Options and Add-ins: Fruit, cheese, nuts, and vegetables
Once you understand this, you can build a perfect dinner party salad with whatever you have.

If you want my exact go-to version, this is what I make:
👉 Mixed greens + Romaine (for crunch) + toasted pine nuts + a simple balsamic honey dressing + grated parmesan. Then I add seasonal add-ins
It's fresh, slightly sweet, and always gets compliments.

- Romaine + spinach - crisp, crunchy + great color.
- Romaine + arugula - crunchy with a little bite. My go-to.
- Arugula + butter lettuce - peppery + delicate
- Spinach + arugula - soft with a peppery kick
Olive Oil Substitute:
- Avocado oil - closest match, mild and smooth
- Sunflower or canola oil - light and budget-friendly
- Walnut oil - a little nutty and elevated (great for entertaining)
Balsamic Substitute:
- Red wine vinegar (your everyday go-to) -Bold, tangy, classic "house salad" flavor
- Apple cider vinegar (slightly sweet + fresh) Light fruitiness from apples
- Aged Balsamic vinegar (thick and sweet). You may omit the honey if using this. Note: Most of the "aged" balsamic in the grocery store isn't the really thick, sweet variety.
- White wine vinegar (light + subtle) Milder than red wine vinegar
Honey Substitute:
- Maple Syrup -closest swap, same sweetness level
- Agave - mild and neutral
- Brown sugar - adds a little depth (whisk well)
- White sugar - simple and clean
- Dijon mustard - not sweet, but helps balance + emulsify
- No sweetener - works if your vinegar is naturally sweet like the aged balsamic


Variations: Salads by Season (save for later 🔥)
- 🍁 Fall: Apples + pecans + goat or Parmesan cheese + pine nuts +sliced shallot or red onion if desired w/ the balsamic maple salad dressing
- ❄️ Winter: Pears or halved grapes + cranberries + your favorite nut + blue cheese + sliced shallot or red onion if desired w/ balsamic or maple salad dressing recipe
- 🌸 Spring: Strawberries, blue Berries + Goat or Feta Cheese + nuts + sliced shallot or red onion if desired w/ balsamic salad dressing recipe

- Add olive oil

- Add Balsamic

- Whisk. Add salt and pepper and whisk. Taste and adjust salt or other ingredients to taste.

⏰ How to Make My Go-To Salad for a Dinner Party Ahead of Time
This is where people overcomplicate things-don't:)
- Wash, chop and dry everything in the morning
- Add to serving bowl (less dishes!)
- OR use an XL Ziploc if fridge space is tight
- Layer ingredients (wet first, like tomatoes, olives, artichokes → then the dry, like cheese and lettuce. Exception: I add the croutons and nuts right before serving.)
- Cover with damp paper towel + refrigerate
- Dress & Toss right before serving.

👩🍳 Expert Salad Dressing Tip:
Start with a small amount of dressing on your salad, toss, and taste before adding more. It's easy to overdress a salad. Add slowly so the greens stay light, fresh, and perfectly coated-not soggy. If you do overdress by accident, add more green or toppings and toss.

I love serving salad as a first course.
It:
- slows the dinner down (more time to relax, chat and sip:)
- gives guests something light and fresh to start
- gives you a little breathing room to finish the main course

Mixed Greens Salad
Ingredients
- 3 tablespoon olive oil extra virgin, walnut or canola oil will work
- 3 tablespoons balsamic vinegar red wine, white wine, apple cider vinegar are options
- 1 ½ teaspoon honey or maple syrup
- ¼ teaspoon salt
Mixed Greens Salad and optional Add-ins
- 8 ounces Mixed Greens: 6-8 cups lettuce or your favorite lettuce and ½ chopped Romaine
- 2 cups fruit and or veggies see combinations in notes
- ⅓ cup cheese feta, goat or parmesan
- 3 tablespoons nuts pine nuts, walnuts, pecans or almonds (optional)
- 1 shallot sliced thin add as much as you like
Instructions
- Add all of the dressing ingredients to a bowl and whisk
- Taste. Add additional vinegar, honey, or salt to taste.
- Prepare, wash and dry fruit
- Add greens to a large mixing bowl. Add toppings (I reserve a spoonful of each topping to garnish the top of the salad.
- Toss the mixture in the desired amount of dressing. You may not need all the dressing. Add slowly and add more as needed.
- Add reserved toppings for garnish and add pepper if desired.
