But first, what in the world is Gorgonzola Cheese? Well….it’s a cheese that is produced in Gorgonzola, Italy! It is sometimes confused with Blue Cheese, but there are some differences. First, Gorgonzola cheese is not as smelly as blue cheese, nor does it have the sharp taste of Blue Cheese. Gorgonzola is produced from cow’s milk. It's aged 3-4 months, while blue cheese is typically aged longer.  So now that you know what gorgonzola is,  lest get onto why this sauce is so amazing!

Gorgonzola Cream Sauce is so versatile!  I nserve this sauce on main dishes such as steak, chicken, pasta, ravioli or gnocchi. This sauce has been a part of some of my most memorable meals around my table. The creamy decadence is like no other. I had one guest ask “would it be rude if I licked my plate:)  It was so funny and a testament to how good it really is.

Pasta Sauce with Blue Cheese

The Difference Between Gorgonzola and Blue Cheese

The Difference Between Gorgonzola and Blue Cheese

Gorgonzola and blue cheese are both blue-veined cheeses, but they have distinct differences. Gorgonzola, originating from Italy, is typically creamier and milder with a slightly sweet undertone. It can range from soft and buttery to firm, depending on its age. Blue cheese, on the other hand, is a broader category that includes varieties like Roquefort and Stilton. It tends to have a stronger, more pungent flavor with sharper, saltier notes. The specific molds used also give Gorgonzola its milder, less aggressive tang compared to other blue cheeses.

Pasta Sauce with Blue Cheese

So, when you're craving something with a bit more pungent and more sharp and blue cheese flavor, try this pasta sauce with blue cheese instead of gorgonzola for a twist. Simply sub the same amount of blue cheese with the grogonzola.   The cheese melts perfectly into a warm sauce, providing a bolder flavor that's hard to beat. Whether you're tossing it with penne or drizzling it over ravioli, a pasta sauce with blue cheese can take your meal to the next level.

The best part of pasta with gorgonzola sauce (or blue cheese) is it's so easy to make and you can use it on so many different dishes. Use it on:

1) different types of pasta, from pasta, ravioli to gnoochi

2) you can also add ingredients like arugula, pine nuts or walnuts, or even grilled chicken or shrimp to add even more protein to the dinner.

The bold, savory flavor of Gorgonzola blends perfectly with the creaminess of the sauce, making it a comforting yet gourmet option. Perfect for a cozy night or a special occasion, pasta with gorgonzola sauce brings a touch of fabulousness with minimal effort.

Spaghetti Gorgonzola Recipe

Using Gorgonzola Cream Sauce on spaghetti is like turning a simple pasta dish into a gourmet affair. Here's a straightforward guide to achieving pasta perfection using your gorgonzola cream sauce:

  1. Cook the Spaghetti: Start by boiling your spaghetti until it reaches al dente perfection. We're talking pasta with a bit of a backbone, not the limp noodles you might find in a sad cafeteria. Drain, but don't rinse the pasta – the starch to helps the sauce cling to the pasta.

  2. Prepare the Gorgonzola Cream Sauce: See the recipe below.

  3. Toss and Coat: Time to bring the spaghetti into the saucy rebellion. Toss those al dente pasta into the pan, and toss to be sure each piece gets a coated of the Gorgonzola Cream Sauce. This is not a delicate affair – we're going for a full-on cheese hug, making sure every bite packs a flavorful punch.

  4. Garnish with Fresh Herbs (optional): Don't forget the finishing touch. Sprinkle some fresh herbs on top of your Spaghetti Gorgonzola recipe masterpiece. A parsley confetti on your pasta party adds a touch of freshness to the boldness of the dish.

  5. Serve and Enjoy: Plate up your Spaghetti Gorgonzola Recipe. Each bite should be a delight of flavors – the creamy rebellion of Gorgonzola, the perfectly cooked spaghetti, and the herbaceous notes from the garnish. This is not just a meal; it's a culinary awakening. Heehee
