You may have also seen this recipe called cottage cheese flatbread. It's essentially the same idea-the difference is how you use it. Keep it flat for sandwiches or pizza, or fill and roll it into a wrap.
The biggest trick is getting the thickness and bake just right. You want the center completely set, but you don't want to bake it so long that the edges become dry and brittle.

What Is Cottage Cheese Flatbread?
Cottage cheese wraps are made by blending cottage cheese and eggs into a completely smooth batter, spreading it into a thin layer and baking it until set.
You'll also see this recipe called cottage cheese flatbread or cottage cheese and egg flatbread.
It isn't the same as traditional flatbread or cottage cheese bread made with flour and yeast. This version is thinner, softer and designed to stay flexible enough to fold or roll around fillings.
And don't worry if you're not a huge cottage cheese fan. Once it's blended smooth, you don't get the curdy cottage cheese texture.
🥚 Ingredients You'll Need

Cottage Cheese
Cottage cheese adds protein, moisture and structure. Full fat or reduced-fat cottage cheese both work in the recipe.
I've noticed some brands have longer ingredient lists than I prefer (Aldi in particular), so I usually reach for Daisy or Belfonte cottage cheese.
One thing to pay attention to is moisture. Cottage cheese can vary from brand to brand, and that can affect how quickly the wrap sets.
Eggs
The eggs help bind the cottage cheese mixture and allow the flatbread to set during baking. They are important to the structure of this particular cottage cheese wrap recipe.
Seasonings
The basic flavor is mild, which makes this easy to customize.
The base is very mild, so season it depending on how you plan to use the wraps.
- Garlic salt
- Onion powder
- Italian seasoning- Great for Cottage Cheese Pizza Flatbread.
- Everything bagel seasoning
- Black pepper
- Parmesan
🥄 How to Make Cottage Cheese Wraps

- Blend Until Completely Smooth
Add the cottage cheese, eggs and seasonings to a blender or food processor. Blend until completely smooth.

- Prepare the Baking Sheet
Line a ¼ size baking sheet with parchment paper. If using a regular size baking sheet, you will only spread the mixture on half of it. Parchment makes the cooled baked wrap much easy to remove.

- Spread the Batter Evenly
Pour the mixture onto the parchment and spread it into approximately ¼". Try to keep the thickness as even as possible from the center to the edges.

- Bake Until Set
Bake at 350F/176C for for around 25-30 minutes, or until the center is completely set and no longer looks wet. Look for a lightly browned top rather than relying only on the clock. Every oven is different.

- Cool Before Peeling
Let the wrap cool on the pan for 5 minutes before trying to remove it. It continues to firm up as it cools.

6. Peel off Parchment
Once it's ready, gently peel the parchment away from the back of the wrap instead of pulling the wrap aggressively from the paper.
That helps keep it from tearing.

How to Make Cottage Cheese Flatbreads in an Air Fryer
You can also make a smaller cottage cheese flatbread in the air fryer.
Because most air fryer baskets are smaller than a baking sheet, make a smaller batch and spread the mixture in a thin, even layer on parchment cut to fit your basket.
Air fry at 350°F for about 10 minutes, then check it and continue cooking as needed until the center is completely set and the edges are lightly golden.
Let it cool before peeling it from the parchment. Air fryers vary quite a bit, so use the texture and doneness of the center as your guide rather than relying only on the clock.
🌯 How to Use Cottage Cheese Flatbread as a Wrap
- Once baked and cooled, this cottage cheese flatbread is soft and flexible enough to use as a wrap. The key is to bake it until fully set without letting it get too dry or crisp. For the best results:
- Spread the batter evenly. Thin edges can overcook and become brittle before the center is done.
- Don't overbake it. Bake just until the flatbread is set and lightly browned so it stays flexible.
- Let it cool before rolling. It firms up as it rests and is less likely to tear.
- Don't overfill it. Too much filling can make a thin wrap split when you roll it.
- Go easy on very wet fillings.
- Place moist ingredients thoughtfully. If using tomato, dressing or juicy vegetables, keep excess moisture from sitting directly against the wrap for a long time, or use a barrier like lettuce, cheese or sliced meat to keep the flatbread from getting too moist.
Cottage Cheese Wrap Filling Ideas

Cottage Cheese Flatbread Variations
- Everything Bagel Flatbread: Add everything seasoning for a savory breakfast or sandwich wrap.
- Italian Flatbread: Add Italian seasoning, garlic and a little Parmesan.
- Spicy Flatbread: Add red pepper flakes or your favorite spicy seasoning.
🪄 Tips for the Best Cottage Cheese Flatbread
- Blend Longer Than You Think
- If you're making a wrap, spread it thinner. If you're making pizza, leave it a little thicker for more structure.
- Once the middle is set and no longer wet, start checking it. You don't need the entire thing deeply browned.
- Let It Cool: This may be one of the most important steps. The wrap firms up as it rests, so don't decide that it hasn't worked while it's still piping hot.
How to Store Cottage Cheese Flatbread
Store cottage cheese flatbread in an airtight container or zip bag in the refrigerator for 4 to 5 days.
Layer with parchment paper: Place individual flatbreads between individual pieces on parchment paper.
Freeze for long-term storage: Wrap pieces individually or layer them with parchment paper in a freezer-safe bag or container for up to 2 to 3 months. Thaw in the fridge before using.
How to Reheat Cottage Cheese Flatbread
- Skillet: Warm in a dry skillet over medium heat for 1 to 2 minutes per side to re-crisp. Great for a pizza flat bread.
- Microwave: Microwave for 20 to 30 seconds if you prefer a softer, more pliable texture.

🍕 Cottage Cheese Flatbread Pizza
The same recipe also works as a cottage cheese flatbread for pizza.
For pizza, spread the batter a little thicker than you would for a wrap. The extra thickness gives the base more structure to hold sauce, cheese and toppings. Because it's thicker, it may also need a little longer to bake through.
Bake the flatbread first until the center is completely set.
Want a Crispier Pizza Base?
If you prefer a crisper bottom, give the fully baked flatbread a quick finish in a cast-iron skillet before adding the pizza toppings.
Lightly grease a cast-iron skillet and heat it over medium heat. Add the baked flatbread and cook just until the underside starts to brown and crisp.
Watch it closely-the flatbread is already cooked, so you're only trying to crisp the bottom.
Then add a thin layer of Parmesan, sauce, mozzarella and your favorite toppings. Finish it in the oven until the cheese is hot and bubbly.
Tip: Keep the sauce and toppings fairly light. This is still a softer cottage-cheese flatbread rather than a traditional pizza dough, and too much moisture can make the center soft.
Why Are My Cottage Cheese Wraps Soggy?
- If the center seems wet or soggy, first check the thickness.
- A thick center takes longer to cook than thin edges.
- Make sure the center looks completely set when it comes out of the oven, then give it time to cool. The texture becomes firmer as it rests.
How to Store Cottage Cheese Wraps
- Let the wraps cool completely before storing so you don't trap excess steam.
- Store them wrapped in plastic in the refrigerator for 3-5 days.
- If stacking more than one, placing parchment between them can help keep them separated. Reheat in the microwave for a wrap or a skillet for a crispier flatbread.
🤔 Cottage Cheese Flatbread FAQs
Not really. Once the cottage cheese is blended completely smooth with the eggs and baked, you don't get the curdy texture most people associate with cottage cheese. The flavor is mild, which makes the wrap work with both breakfast and lunch fillings.
Not by simply leaving the eggs out of this recipe. The eggs provide structure and help the cottage cheese mixture set into a flexible wrap. No-egg versions usually rely on flour or another ingredient for structure, which makes them a different recipe.
et the wrap cool before trying to remove it. It firms as it rests and becomes easier to handle. Instead of pulling the wrap upward, gently peel the parchment away from the back. Some parchment papers are more nonstick than others. If you stick to your parchment, try using a baking spray on your parchment as added precaution.
