Easy Tomato Bruschetta

Here is a unique way of serving tomato bruschetta. I grilled 1/2 of a loaf of bread and topped it with this glorious tomato mixture, and I then sliced it at the table. Mmmmm.

Here is a unique way of serving tomato bruschetta. I grilled 1/2 of a loaf of bread and topped it with this glorious tomato mixture, and I then sliced it at the table. Mmmmm.

Ingredients

  • 1 loaf of heart Country, or Ciabatta bread sliced in half longways (save half for another use)β €
  • 3 cups grape and or cherry tomatoesβ €
  • Basil Infused olive oil* (I prefer Olive Tree Olive Oils)
  • 1/2 tsp Kosher salt β €
  • 2 cloves garlic mincedβ €
  • 1/4 cup chopped fresh basilβ €
  • Balsamic glaze for finishing (optional)β €
  • Extra olive oil for garnishβ €

Instructions

  1. Preheat the grill or grill pan to medium-high. Brush or scrape the grill grate clean and oil it well with vegetable oil.
  2. Brush the bread half with olive oil and sprinkle with kosher salt. Grill, (flipping once) until lightly charred and crisp. Remove to a serving platter.
  3. Tip: Be sure to have a fire-free area on your grill or a patter handy in case the bread starts to burn.
  4. Put the cherry tomatoes and garlic in a grill safe pan and generously drizzle with extra virgin olive oil and season with salt.
  5. Place the pan on the grill, shaking the pan from time to time, until the skins begin to blacken and split, about 5 minutes.β €(if you like your tomatoes more firm, don’t only cook them for a short bit…and remove from heat before they burst.
  6. Top the grilled bread with the blistered cherry tomatoes and top with the basil. Drizzle with more extra virgin olive oil and balsamic glaze if desired, and sprinkle generously with more Kosher salt.β €

Notes

  • Don’t top the bread until you are ready to serve so the bread doesn’t get soggy. Alternatively, you can place the topping in a bowl and serve it next to the bread.
  • For the best taste and texture, store your whole tomatoes on the counter, not the refrigerator.
