Strawberry Bruschetta

An easy and beautiful appetizer or snack. The way creamy cheese works with the sweet strawberries, syrupy balsamic, and crispy, charred bread is a thing of beauty.

Ingredients

  • 1 loaf Italian or French bread, cut into 12 slices (save the rest of the bread for another use)
  • 1 tablespoon olive oil - I use Olive Tree Vanilla Bean Olive Oil.
  • 1 pound strawberries, washed and sliced
  • 1 tablespoon sugar
  • 2 teaspoons fresh thyme, basil, or mint leaves, plus more for serving
  • 1 cup goat or mascarpone cheese, room temperature
  • Good balsamic or balsamic glaze (I prefer Olive Tree Strawberry or Traditional Balsamic)
  • Salt and freshly ground pepper to taste

Instructions

  1. Combine strawberries and sugar in a small bowl and set aside.
  2. Brush bread with vanilla olive oil and a sprinkle of kosher salt
  3. Position oven rack a few inches below broil and preheat broiler. Align bread slices on a baking sheet. Broil first side until golden brown, about 1 minute (don't walk away and keep and eye on them they'll brown quickly), then flip slices to the opposite side and broil opposite side until golden brown.
  4. Spread cheese on toasted bread. Add black pepper, salt, and herbs to the strawberry mixture. Spoon over the cheese-topped bruschetta. Garnish with additional herbs. Drizzle lightly with balsamic vinegar.

Notes

You can substitute peaches for strawberries in the summer.


All balsamic vinegar is not created equal. Good quality aged balsamic vinegar have complex flavors and thick syrupy sumptuous viscosityβ€”they are so good they are sometimes they’re even sipped as a palate cleanser aperitif. Commercial-grade balsamic vinegar found in most grocery stores is mass-produced and aged for a minimum amount of time, if at all. These vinegar are made from wine vinegar and often have caramel coloring, thickeners, and flavor added. Their consistency is thin and has a  sour taste and pungent aroma.


The Olive Tree Balsamic I recommend above is an excellent choice. It's an 18 year aged Balsamic vinegar from Modena Italy with a delicious balance of sweet and sour and an almost syrup-like consistency.
