Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 pound ground beef
  • 2 1/2 tablespoons chili powder
  • 1 1/2 tablespoons ground cumin (or more to taste)
  • 1/2-1 tablespoon granulated sugar
  • 2 tablespoons tomato paste
  • 1 tablespoon garlic powder
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne pepper, optional
  • 1 1/2 cups beef broth
  • 1 (15 oz.) can petite diced tomatoes
  • 1 (16 oz.) can cannellini beans or beans of your choice, drained and rinsed
  • 1 (8 oz.) can of tomato sauce
  • Individual Frito bags.

Instructions

  1. Add the olive oil to a large soup pot and place it over medium-high heat for two minutes. Add the onion. Cook for 5 minutes, stirring occasionally.
  2. Add the ground beef to the pot. Break it apart with a wooden spoon. Cook for 6-7 minutes, until the beef is browned, stirring occasionally.
  3. Add the chili powder, cumin, sugar, tomato paste, garlic powder, salt, pepper, and optional cayenne. Stir until well combined.
  4. Add the broth, diced tomatoes (with their juice), drained beans, and tomato sauce. Stir well.
  5. Bring the liquid to a low boil. Then, reduce the heat (low to medium-low) to gently simmer the chili, uncovered, for 20-25 minutes, stirring occasionally.
  6. Remove the pot from the heat. Let the chili rest for 5-10 minutes before serving.

Ingredients

  • 8 cups brown sugar or cinnamon cereal squares
  • 1 cups of pecan halves
  • 1/3 cup light corn syrup
  • 1/3 cup firmly packed brown sugar

  • 1/2 teaspoon Baking Soda
  • 2 cups white chocolate covered pretzels
  • 1 cup salted peanuts, pecans or cashews

Instructions

  1. Heat oven to 250°F. Spray rimmed baking sheet with non-stick cooking spray. Add cereal to the pan; set aside.
  2. In a 4-cup microwaveable bowl, combine corn syrup, sugar and butter.
  3. Microwave on HIGH 1 minute 30 seconds. Stir. Microwave 30 seconds to 1 minute 30 seconds OR until boiling.
  4. Stir vanilla and baking soda into mixture. Pour over cereal mixture; stir to coat evenly. Bake 1 hour, stirring every 20 minutes. Pour onto wax or parchment paper to cool. Break into pieces.
  5. When cooled add nuts and pretzels. Makes about 10-11 cups.
  6. Store tightly covered.

Notes

-Make it your own, add chocolate covered raisins, chocolate chips, dried fruit and any nuts.

-Make it and advance, let it cool and store in airtight container.

Football Apple Hand Pies

Apple Hand Pies are a perfect hand-held dessert that tastes like fall. Perfect for a tailgate or any time!
Prep time: 30 MinCook time: 12 MinTotal time: 42 Min

Ingredients

  • 21 ounces apple pie filling, store-bought or homemade below (you won’t need it all)
  • 1 teaspoon cinnamon
  • 2 package pie crusts (4 crusts), I use Pillsbury
  • 1 egg
  • Store-bought icing in a tube for laces (optional)

Instructions

  1. Preheat oven to 425°F.
  2. Chop apple pie filling into small pieces and mix with cinnamon.
  3. Roll out the pie dough to ⅛-inch thick and cut the dough into12 football shapes.
  4. Add 1- 2 tablespoon apple pie filling to 6 of the footballs. Don't over stuff.
  5. Brush egg wash around the edges and top with the remaining 6 football shapes. Use a fork to crimp the edges firmly together. Make two slits on the top of the pie.
  6. Brush with tegg wash and bake for 12 minutes or until golden brown.
  7. After cooled, pipe on laces with icing. I used store-bought icing.

Notes

  • Hand pies can be baked in an air fryer for 8-10 minutes at 350°F. Any flavor of pie filling may be substituted. 
  • You can shape the hand pies in whatever shape you want. I used a football shape. You can also use a round cookie cutter. I don’t suggest anything smaller than 3 inches in diameter because you can’t fit enough filling in a pie that small. You can also shape into rectangles. Bake time will be more or less depending on size– just bake until crust is golden brown. Use the same oven temperature.
  • Hand pies can be made 2 days in advance and stored two days at room temperature. Refrigerate after that. Reheat in the oven or air fryer.
