Fast, easy, garlicky, olive oily shrimp. This is always a crowd favorite. You can prep the sauce and the shrimp early in the day to make mealtime or entertaining a breeze.

How to Buy Shrimp:

I like wild-caught frozen shrimp. Frozen shrimp are frozen immediately when the fishermen bring them onto their boats, keeping them at their flavor peak. Sprouts has great sales on their Gulf shrimp.

Buy shrimp by the count, not the size. The count is the number of shrimp per pound. Any size will do, but smaller shrimp require less cook time.

  1. Preheat the oven to 425 degrees F.
  2. Peel and devein the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper.
  3. Arrange the shrimp in a single layer of an oven-proof skillet or baking dish. Pour the remaining marinade over the shrimp.
  4. Bake for 10 to 12 minutes or until shrimp are opaque and cooked through. The cooking tie will vary based on the size of the shrimp.

Notes

Make-Ahead: Shrimp can be peeled and deveined a day before. The dish can be assembled an hour before.

Olive Tree is a local KC company and their oils and vinegar can be purchased and shipped online. A great shortcut to flavor.


Optional Add-ins

Sometimes I add a sprinkle of paprika to add a little color on the shrimp

Add 1 Tablespoon minced garlic to the shrimp mixture and toss

Add 1 teaspoon grated lemon zest to the shrimp mixture and toss

Scatter 3 tablespoons of butter over the top before baking

Garnish with slices of lemon before serving

Serving suggestions: Serve with a green salad and crusty bread
