Ingredients
- 1 can store-bought pizza dough (I use Pillsbury)
- 2 teaspoons olive oil (I prefer Olive Tree Blend)
- 2/3 cup marinara or sauce (homemade or store-bought)
- 1 teaspoon Italian seasoning, ground basil or ground oregano
- garlic salt, to taste
- 3/4 cup shredded mozzarella cheese
- pepperoni slices
- 1/2 cup yellow cornmeal
- 1 1/2 cup marinara for dipping
- optional: fresh basil, parmesan for garnish
Instructions
- Unroll pizza dough onto a floured 16x12” piece of parchment paper. (this is the size that fits a standard sheet pan) Use a rolling pin to stretch the dough into a large rectangle to fill the parchment.
- Lightly brush the dough with olive oil. This will keep the dough from getting soggy. Using your fingers, press dents into the dough. This will keep any bubbles from forming.
- Lightly spread the dough with sauce.
- Sprinkle with herb seasoning of choice and garlic salt.
- Sprinkle shredded mozzarella evenly over sauce, then top with pepperoni. Starting with the long end, carefully roll the pizza dough and pinch end to seal.
- Place log onto a baking sheet, seam side down and place baking sheet in the freezer to chill, uncovered, for at least 20 minutes. This will make them much easier to slice. You don't want it frozen solid.
- During that time, preheat the oven to 400°F (204°C).
- Remove the log from the freezer and log into 1-inch slices.
- Sprinkle cornmeal onto a plate. Dip the bottom of each slice into cornmeal and place them on the baking sheet, cornmeal side down. The cornmeal is optional but gives the bottom of the rolls an extra delicious crisp. Sprinkle the tops of the rolls with parmesan cheese, if desired.
- Bake for 15-20 minutes or until the sides are lightly browned. Time will depend on the thickness of your wheels, you know they are done when they are lightly browned.
- Cool for 5 minutes. While cooling, warm dipping sauce. Then sprinkle with fresh basil on top (if desired) and serve with dipping sauce. Serve immediately,
Notes
- Feel freeze to squeeze the roll to tighten it up. I even pull it gently to make it a little longer if needed.
- When you freeze for 20 minutes before slicing, the pinwheels will be more uniform.
- Leave a 1-inch section of dough empty on the short end to help seal the edge.
- Lightly flour surface to keep the dough from sticking when rolling out.
- Sprinkle with parmesan cheese for more cheese when serving!
- Make-Ahead & Freezing Instructions: Prepare the rolls through to where you freeze the logs. Cover the rolls tightly with plastic wrap and refrigerate (instead of freezing) for up to 1 day. The next day, proceed with the recipe.
- Baked pizza rolls freeze well, up to 3 months. Bake frozen rolls at 350°F (177°C) for 25-30 minutes or until heated through.
Optional Topping Ideas:
- Cinnamon sugar and butter, serve with honey for dipping
- Jam, butter, and chopped nuts
- Pesto, parmesan, and chili flake. Serve with marinara
- Roasted garlic, parmesan, and oregano. Serve with melted garlic butter
- Cooked sausage and onion. Serve with marinara
- Pepperoni and green pepper. Serve with marinara
