This is my go-to summer side dish. I serve this creamy corn dish as a dip, side dish, or on bruschetta.

Fresh Cream Corn
This is my go-to summer side dish. I serve this creamy corn dish as a dip, side dish, or on bruschetta.

Ingredients
- 2-3 tablespoons butter
- 6-8 sage leaves or basil
- 3 ears corn, grilled, kernels removed
- Salt and pepper
- 1/4 cup heavy cream
Instructions
- In a skillet over medium-high heat, lightly brown the butter.
- Add the sage and cook until aromatic.
- Add the corn kernels and cook for 1 minute. Season with salt and pepper. Pour in the cream and simmer until it is reduced by half, about 4 to 5 minutes
- Serve as a side dish, over bruschetta or scoops chips.
Notes
- Add a couple of cloves of garlic for a variation.
- Add a little red pepper for heat if desired.
