Creamy Cheesy Corn Dip
This easy cheesy corn dip with cream cheese, cheddar, is a creamy, delicious dip that’s perfect for all your summer parties. It’s a great appetizer for tailgating, too! My Corn Dip recipe is simple to make and ready in about 20 minutes.
Ingredients
- 2 tablespoons butter or basil infused olive oil (I prefer KC’s Olive Tree olive oil)
- 8 oz. cream cheese
- 2 cans, drained corn
- 1 cup shredded sharp cheddar cheese
- 4 oz. can of fire roasted diced green chiles
- 1 jalapeno, diced (optional)
- Garlic salt to taste
- Black pepper or cayenne pepper to taste
- Optional toppings (see notes)
Instructions
- In a skillet (at least 8 inches) melt butter and cream cheese over medium heat and stir until smooth.
- Add in corn, green chiles, garlic salt, pepper and jalapeno if using, and stir to combine.
- Add cheddar cheese and stir until fully melted.
- Top with optional toppings if desired
- Serve hot with tortilla chips!
Notes
- Top with croumbed cooked bacon, green onions, or fresh parsely.
- This can be made in a slow cooker: Add all ingredients and cook on low for 3-4 hours, stirring occasionally, or until everything is melted and bubbly.
- You can also use fresh corn, simply cut it off the cob. (3-4 pieces)
- You can replace the olive oil with butter.
