2teaspoonssmoked paprika
1teaspoongarlic powder
1teaspoononion powder
1teaspoonground mustard powder
½teaspooncelery saltoptional
¼teaspooncayenne pepper
Instructions
Preheat the oven to 275°F (135°C). Set aside a large roasting pan or rimmed baking sheet and foil.
If your ribs still have the thin membrane covering the back of the rack, remove it. (If you don't know how see the video in the notes)
Make the rub by combining all the ingredients. Storing it in an air-tight container. (you won't use it all for this recipe)
Season both sides of the ribs liberally with salt and pepper and a sprinkle of garlic powder. If you are using a spice rub, skip the salt and massage the rub all over the ribs generously.
Place each rack of ribs, meat-side up, on foil and wrap tightly. You may need to cut the ribs in half to fit them into the pan. Cover the pan or baking sheet tightly with aluminum foil. Alternatively, wrap the rack in tight foil packets and place them on the baking sheet.
Bake the ribs until the meat falls easily from the bones, 2 ½ to 3 hours. If ribs don't pull from the bone easily, continue cooking. If the meat pulls away from the bone, they’re ready to eat.
Making ahead- remove from the oven. Let cool and refrigerate until ready to eat.
When ready to serve: Reheat ribs in oven at 275 degrees for 20-30 minutes. Then turn your oven to broil. Slather with BBQ sauce and return to the top rack of the oven. Broil until lightly browned. WATCH them! It only takes a short amount of time. Alternatively, you can finish them off with a char on a hot grill!

Notes
Multiple racks of ribs: Wrap each rack in separate pieces of heavy-duty aluminum foil. You can fit two racks on one baking sheet, so most ovens will accommodate 4 racks.
💡 Quick tip: Buy premade spice rub from your grocery store if short on time. But this is delicious.
If you’re skipping sauce, go a little heavier on the rub.
