Ingredients

Instructions

  1. In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute. Scrape the sides and bottom of the bowl, then process for 30 seconds more. This extra time helps β€œwhip” or β€œcream” the tahini, making the hummus smooth and creamy.
  2. Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl, and then process for another 30 seconds or until well blended.
  3. Drain the chickpeas- and peel if desired. Add half of the chickpeas to the food processor and process for 1-2 minutes. Scrape the sides and bottom of the bowl, then add the remaining chickpeas and process them until thick and relatively smooth, 2 minutes.
  4. The hummus will likely be really thick and still have tiny bits of chickpea. To fix this, slowly add 2 to 3 tablespoons of cold water to the food processor turned on until you reach the perfect consistency.
  5. Taste and adjust as needed. Serve hummus with a drizzle of olive oil and a sprinkle of paprika, sumac, or Za’atar.
  6. Store homemade hummus in an airtight container and refrigerate for up to one week. Freeze, covered with a thin layer of olive oil, for up to one month.

For extra creamy hummus:

Peel Your Chickpeas

Yes, it’s a bit tedious, but peeling the skins off your chickpeas makes a world of difference. Smooth chickpeas = smooth hummus.

Don't worry about reoving every last little bit of peel. Following these instructons will remove most of the skins, which is good enough.

  1. Drain your chickpeas if they are canned. Then run ice cold water over them for about 2-4 minutes. This removes starches in the peas, which improves flavor, and it also loosens up the skins.
  2. After they've had a good soaking, work your fingers in through the chickpeas. You'll be able to slip lots of the skins off easily - after 2-3 minutes of gently pinching, you'll find most of the skins loose.
  3. Shake off any excess water and then dump the chickpeas onto a baking sheet lined with paper towel. rub the towel over the chickpeas for approximately 30 seconds.  Feel free to repeat this step if necessary. Leave the chickpeas to dry, about a half an hour.
  4. Once dry, remove the paper towel and then gently roll the chickpeas with your palm - careful, as they'll be easily smashed in this phase. The remaining skins will fall to the wayside.

Now your gorgeous, skinless chickpeas are ready to use!
