Quick Easy Chicken and Dumplings Recipe
Ingredients
- 2 tablespoons olive oil (or butter)
- 1/2 large yellow onion, diced (or one medium)
- 2 carrots, sliced (optional)
- 32 ounces of Chicken stock, homemade preferred
- 10.5 ounces Cream of Chicken Soup
- 1 bay leaf (optional)
- 2-3 cups cooked shredded chicken ( I use rotisserie)
- 1 bag Reames of frozen dumplings or 2 cans of refrigerated biscuits cut in quarters.
- Kosher salt to taste
- pepper to taste
Instructions
- Saute carrots and onion until soft
- Add cream of chicken soup and stock and stir
- Add 2-3 cups of shredded chicken
- Add dumplings or cut biscuits into small pieces and place in the chicken stock mixture. Stir well.
- Add salt and pepper to taste.
- Reduce the heat, stir well, and let simmer for 5-10 minutes
