Ingredients

Instructions

  1. Preheat oven to 400ºF/200ºC
  2. Remove puff pastry from the freezer and thaw according to package instructions.
  3. Unfold puff pastry on parchment and gently roll to about 10” x 12”.
  4. In a medium bowl, combine sugar, cinnamon butter.
  5. Core and slice apples. Set aside while you prepare the pastry.
  6. With a pizza cutter cut each puff pastry sheet into six, equal pieces (they do not have to be perfect or exactly even).
  7. Score a 1/4 border around the edge of each pastry for an even puff.
  8. Return the puff pastry to the refrigerator.
  9. Add a dollop of the butter-sugar mixture to each tartlet. Arrange apple slices on puff pastry.
  10. Brush sides with egg mixture. It just makes it pretty and shiny.
  11. Sprinkle the entire pastry with sugar.
  12. Bake 15-30 minutes until golden brown and the pastry is puffed and crisp. Check at 15 minutes, all ovens are different. Check underneath to see that the pastry has browned, if not bake for another 5-8 minutes but lower the oven temp to 350ºF/180ºC.
  13. Remove tart from the oven. Drizzle with caramel sauce.
  14. Transfer the tart to a wire rack to cool. This keeps the bottoms crisp.
  15. Serve with ice cream if dersired.

Notes

  • I only use the1 tablespoon of ground almonds if the fruit is really juicy, They add a little bit of lavor and absorb any juices from the apples so that the pastry is crisp!
