- Place the raw ground beef, diced onion, and garlic in the slow cooker. Pour in the diced tomatoes and the marinara sauce
- Add in seasonings.
- Pour in the beef broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the lid. Taste and add more salt and pepper if needed.
- Break the dried lasagna noodles into bite-size pieces and stir them in. I break them in over the crock pot, so all the small pieces will fall directly into the crock pot.
- Cover and cook on high for 30-45 minutes until the noodles are cooked through.
- Serve immediately. Ladle soup into bowls, add a tablespoon of ricotta, mozzarella, and Parmesan cheese, and top with fresh basil if using.
Notes
- Add more veggies if desired ( 1 bell pepper diced / 16 oz mushrooms sliced or diced) to the soup if desired. Add them when you add the onions.
- Serve with garlic bread and a side salad if desired.
